I've stayed there twice, visited several times as friends used to work there. It's an older hotel that could use some refurbishing, but if you don't plan on spending any time in your room, it shouldn't bother you much (tip: get a room facing the resort/north toward town, otherwise you'll be looking at La Ceiba hotel across the street and all the cruise ships). The hotel has a nice beach across the street, via underground walkway. Decent snorkeling with a sandy walk-in (not ironshore like many beaches on Coz). The pool area is very pretty, lush grounds, etc. On our second visit a couple years ago, we got a promotional package that let us partake of the all-inclusive aspect of the hotel for a few days and we were really disappointed. Breakfast was the highlight, but even that got old after a couple days. Lunches were uninspired -- hamburgers, hotdogs, pizza, all of which somehow tasted "off." We never wasted a dinner there, preferring to hit old favorites in town. If you got a deal on this resort, then I think you'll enjoy it. A chatter on another board said he paid around $750/person including airfare. For that rate, I encouraged him to eat in town and sample the various restaurants without feeling guilty that he had prepaid for all of his meals at the hotel. If you paid big bucks, I can think of several other hotels on the island that I would put ahead of the Sol Caribe.
